Krypteria – “Victorian Speramus”
I’ve been enjoying adding a sour component when cooking meals (or, at least, re-learning the advantages of adding a sour component) – the most obvious, the sour helps the other flavors “pop” a bit more – but it also helps to make dishes a little less one-dimensional – I’ve dabbled with plenty of cuisines that are based around balancing the “four flavors” or “five flavors” – but then I get distracted and revert back to a strong flavor or two rather than balancing flavors
