I first started looking at improving my diet sometime in the early 2000s when Mediterranean and Okinawan diets were becoming popular – from there, it wasn’t too big a jump into one of the Paleo diets – since then, there’s been plenty of criticism (especially towards Paleo diets) of being elitist and certainly not being affordable by the average American – now the focus is on climate friendly and sustainable diets, but, while it’s not talked about as often, the elitism is certainly still there

with something like 60% of those in the US living paycheck-to-paycheck, at one point, I sat down and decided to come up with some guidelines for anyone planning a diet in this day and age – the two criteria were based on affordability and availability – for affordability, the budget is based on some rough napkin-math about best-case for those relying on SNAP («food stamps») – for availability, large chunks of the US qualify as «food deserts», in some areas people have to drive up to half-an-hour to get out of suburbia to a decent grocery store or supermarket (farmers’ markets and CSAs are completely out of the question)

this doesn’t even count the time commitment for prep and cooking – with workers pulling 12 hour shifts (on top of astronomical rates of wage theft), your 16 organic ingredient, meticulously prepared, restaurant level plating ain’t gonna cut it
