bacon fried rice
- 1/4 lb.-ish sliced bacon (streaky bacon, belly bacon)
- 2 eggs
- 1 to 2 c. pre-cooked, refrigerated rice
- splash soy sauce
- (optional) extra cooking oil
- measurements are not precise, they’ll vary between what you have on hand and your personal tastes
- dice up the bacon and then fry it to desired level of crispiness – reserve rendered bacon fat
- in a small bowl, whisk the eggs together with a tspn. or so of cooking oil
- use the back of a spoon to more-or-less separate the rice grains
- on the stove over medium-high heat, re-heat a Tbsp. or so of the rendered bacon fat
- once fat is nice and hot, pour in whipped eggs
- immediately add rice and begin continuously stirring and flipping, making sure to break apart
larger clumps of both egg and rice
- once egg has cooked through, stir in the cooked bacon
- season to taste with an extra spash of soy sauce – careful: the soy sauce is just for flavor,
the bacon will have enough salt and you don’t want to make the dish too salty
