a few years back, I picked up a copy of Bastard Cookbook – I loved Thai food but I knew little about Finnish food – it wasn’t too much later I found out I enjoyed Finnish food as well (including day-to-day items like salmiakki) – the premise behind Bastard Cookbook is that every cuisine (even long established traditional cuisines) is a fusion cuisine – our derision of «fusion» and our worship of «authentic» are purely pretensions – they’re all combinations of favorite cooking techniques and the availability of local ingredients, it’s all process of adaptation – early on, one of the examples given is starting out with pad Thai, arrange it in an ovenproof dish, add a western egg-and-milk base, top with cheese, and bake as you would a regular casserole
