for a large part of the recent decades, I used to watch various cooking shows – starting with Food Network and and continuing through the standards of Hell’s Kitchen and Iron Chef (original Japanese as well as American offshoot) – two items almost always stand out as «tests» of ability for incoming chefs: hollandaise and risotto – I taught myself hollandaise a while back because I loved eggs benedict and then I taught myself risotto «just because» (more to see if I could do it than anything else) – both recipes suffer from the same problem: they’re not hard, they’re tedious – you have to babysit both of them through the entire process, you absolutely cannot rush things – and that’s why I think both are used as tests, the kitchen competition dynamic is nothing but rush
