there have been a lot of iterations on the “banana omelette” or ”2 ingredient banana pancake” – the premise is simple : 1 banana, 2 eggs, mixed together, pan fried, add condiment, serve – more banana and you get more caramelization in the pan – more egg and you get fluffier pancakes – more typically served with sweet condiments (treated as a pancake) – I find the banana provides enough sweetness that salt and pepper or Shan’s Egg Seasoning also work really well
